In a large stainless steel mixing bowl, mix mashed potatoes, flour Parmesan chees, onion, egg, salt and pepper. Stir to combine well.
Form potato mixture into patties. You decide. Anywhere from 2-4 inches. Pour bread crumbs onto a plate or shallow disn. Place potato patties into the Panko and turn, coating both sides.
Heat oil in a large cast iron skillet. Gently place the patties into the oil and fry about 3-5 minutes per side until golden brown. Remove to a paper towel to drain. Sprinkle with additional salt while hot.
